I love pies or "quiches" in fancy French chef call them. I chose to add 1 teaspoon of dried thyme to the egg mixture, but didn't like the taste of it in the end. It was too strong for me. But my neighbours did like the thyme. So let me know: which herb or spice do you like to add? Don't forget to send me a photo of your pies. Recipe Kid-friendly Spinach Pie
Ingredients1 or 2 packages of puff pastry (ready-made, thawed/fridge temperature)200g spinach cubes (thawed)half a large onion or 1 small one8 eggs1 piece of garlicherbs/spices: one teaspoon of thyme or 1 teaspoon dried basil or a bit of nut meg.2 tablespoons of hard, old cheese1 cup of soft cheese, such as Mozzarellaolive oilpepper and saltStep 1: Defreeze the spinach in a microwave or in a pot on low heat.Step 2: Preheat the oven at 175 degrees Celsius.Step 3: Finely chop the onion and spinach. You can do this in a food processor. Pan-fry the onion and spinach with a bit of olive oil, too the onion is translucent. This should take about 5 minutes. Keep stirring with a wooden spoon. The onion shouldn’t burn.Step 4: Put a few layers of kitchen paper towel onto a plate. Put the onion and spinach on top of these so that the paper soaks up the water from the veggies.Step 5. Oil your baking tin / cups. Line these with the puff pastry. Make sure the pastry has got the same thickness everywhere and that there are no holes.Step 6. Beat the eggs in a large bowl. You can do this by hand or with an electric mixer. You will get the best result when you beat the eggs until they are foamy but not yet white.Step 7: Finely chop or crush the garlic. Add this to the eggs.Step 8: Add the rest of the ingredients to the eggs, thus the onion, spinach (make sure there is not paper stuck to it), herbs, cheeses, pepper and salt. Stir it all together with a fork.Step 9: Pour the egg mixture into the pastry-lined cups / baking tin.Step 10. Bake the pies in the oven. If you made small pies, they should only be in them for 30 minutes. If you’ve made one large pie then it should be in there for 50 minutes. Just check your oven regularly. The pies are done when a stick a skewer into them and it comes out clean, without egg attached to it.
